Catfish with Medicinal Herbs
yào shàn tǔ shī
The broth used as a base for the catfish soup is made from eleven types of Chinese herbal medicine, including angelica, wolfberry, and Chuanxiong (Lovage Root). The catfish is immersed into the broth and gently simmered for several hours. The medicinal herbs not only make the catfish aromatic, but also nutritious.
