yáng chūn miàn
The name, Yáng Chūn, comes from Xiǎo Yáng Chūn, the Mandarin name of the tenth lunar month. The reason for this name is because when it first appeared in Taiwanese night markets it only cost 10 NT. The dish is very simple; it consists of a bone broth or water broth, noodles, and seasonal vegetables. A few chopped scallions are usually added to enhance the appearance and taste.
