Taiwan has two types of cold noodles -- Japanese and Chinese. The Japanese noodles are usually called “soba.” The Chinese cold noodles are usually alkaline noodles. The noodles are boiled and then air dried. The noodles are then stirred in salad oil to keep them al dente. The noodles are served with a variety of sauces such as sesame, vinegar, or soy sauce. Some specialty shops may have a special sauce made with traditional Chinese medicines or a garden sauce which contains egg, carrot, cucumber, and cabbage.
