    The name of this dish comes from the method used to prepare it. Wheat flour noodles, shredded carrots, and beans are placed on an iron hot plate (teppan) and fried together. At the last minute an egg is added to the top in order to enhance the taste. The noodles are usually served with a pepper or mushroom sauce.
