Stinky tofu is one of the most recognizable snacks in Taiwan. The traditional method for preparing this dish is to first marinate tofu in fermented brine and then deep fry it. Before serving, the tofu is covered with sour pickled vegetables. You won’t have trouble finding this snack in a night market because its incredibly strong and pungent odor can be smelled from far away.
