Pái Gǔ Sū
Crispy Spareribs are a very popular Taiwanese snack. The small pieces of spareribs are first marinated and then deep fried to a crisp. The marinade keeps the meat tender rather than chewy. This dish is a little similar to Taiwanese style fried chicken; however, unlike the chicken, the spareribs are included in a variety of different dishes. Three of the most common are Crispy Sparerib Soup with White Gourd or Taro, Crispy Spareribs with Rice, and Crispy Spareribs with Noodles.
