    The chicken is first coated with a thick coat of salt and then boiled with rice wine. After refrigeration, it is covered in salt, ginger, black pepper, green onion, and Chinese prickly ash. This extremely tender and succulent chicken dish is served on the bone or deboned according to the customer’s preference.
