    Agar is a traditional beverage in Taiwan. Agar is stewed for a long time in order for the sodium alginate to be released. After the agar solidifies, it is usually cut into cubes and the cubes are added to chilled water with brown sugar syrup. Although this drink is not typically found in big cities it is still popular in many coastal areas.
